Hi friends! Happy Tuesday. Hope everyone is surviving the sudden drop in temperature we are experiencing here in Dallas. It was like shorts and tank top weather on Christmas and now I have on fuzzy socks and gloves before leaving my apartment...ha I'm also a huge wimp when it comes to the cold though.
So NYE is just around the corner and we all know that can only mean one thing- finding an open treadmill or light set of free weights at the gym is going be like winning the lottery.
Don't get me wrong, I totally support anyone trying to get fit and the new year is as good a time as any to get started...just wish it wasn't so lopsided between December and January.
No matter the case- we all have various facets of our lives we can strive to be better in. Whether it's Fitness, Nutrition, Gossiping, or simply being a better person. I'm already kind of a Fitness and Nutrition freak as it is, so this year my resolutions are:
- Make time every morning to do a daily devotional. I used to be really good at this in High School and then once College came around I kind of just let it slip from my list of daily to-dos.
- Never skip breakfast! I really do feel the difference in my metabolism on days where I'm good about eating first thing in the morning as opposed to days that I wait for lunch.
- Lift weights 3 days a week. I'm kind of a Cardio Bunny and after recently meeting with a trainer at Lifetime- I was told I definitely need to balance it out with more weights if I want to start seeing some muscle definition again.
- Not gossiping. This isn't something I'm bad about, but as a woman it's something we all tend to do from time to time no matter how good of a person we think we are. Always a good reminder to strive to be a better person :)
For those of you who also struggle with #2 (Not Skipping Breakfast) I found a super easy trick to making a 60 second Omelet!
It's super simple and quick, giving me (and you) no excuse to skip breakfast- no matter how much of a hurry you're in. All you need is Eggs (or egg substitute) toppings of your choice, a mug, and a microwave. I use Southwestern Egg Beaters here:
Step 1: Pour Eggs into mug and add whatever ingredients you normally put in your stovetop omelet. Here I am using turkey and pico de gallo. Normally I add spinach too but I was out.
Step 2: Place mug in microwave for 60-120 seconds... depending on power of microwave.
Step 3: Carefully remove from microwave + topping of choice and enjoy!
I add a Tbsp of Reduced Guilt Chunky Guacamole and a sprinkle of Himalayan Pink Salt or TJ Everyday Seasoning to mine.
And there you have it- a 60 second (give or take) Omelet!
