Spinach and Goat Cheese Salad


As the weather starts to get warmer, I start craving cold-light meals. Salads are a perfect go-to healthy meal that leave me feeling full and satisfied without the bloat. I stole this salad from my Mom, who brings it to almost every party/gathering we attend. It’s always a hit, which for a salad, says a lot!

Unfortunately, the recipe for the poppy-seed dressing she uses is a family secret and she won’t let me disclose it. But…. this raspberry vinaigrette is actually quite tasty on it!

There are several different variations of this recipe, but for the holiday potluck I made this for, I chose to keep it simple. Feel free to switch up the Goat Cheese/Feta for Blue Cheese crumbles if that tickles your fancy. Or add some green grapes or sliced strawberries to add a little sweetness. 

Ingredients:
Baby Spinach
Honey Crisp Apples (Sliced)
Dried Cranberries
Toasted Walnuts
 Cheese of choice (Crumbled)
Poppyseed Dressing/Raspberry Vinaigrette 








Directions:
1. Chop Walnuts and place in oven on 350 for 10 minutes (or until golden brown)
2. Slice Apples and place in a bowl with Baby Spinach. Toss with dressing
3. Add dried Cranberries, Cheese, and Walnuts. 
4. Toss again and enjoy!
